New Goal: Meal Planning

On Saturday when we were at Target, I saw a little whiteboard just like this one here on sale for 2 dollars. I decided that this would be perfect to get back into meal planning. I've been very bad at meal planning lately, and would often get home from work without any idea of what I would make for dinner. So after making this purchase I got set on meal planning...
  • Saturday was Chicken Tikka Masala with rice and Naan
  • Sunday was Enchiladas with Cilantro Lime Rice and Black Beans
  • Monday was Meatball Sandwiches.
I planned out all these meals, and we made exactly what was planned.
  • Tonight is whatever each of us can find because Scott will be at the homeless clinic when I get home
  • Wednesday is Oven "Fried" Drumsticks with Potato Wedges and whatever vegetable we have
  • Thursday is Lemon Pepper Fettuccine with Chicken and Asparagus
  • Friday is another whatever night because we work at the temple on Friday nights so I just meet Scott there after work
Another one of my goals in meal planning is to try new recipes. So I'm hoping to include a few new recipes every week. If I make any really good ones I'll post them. Please share any good/new recipes that you make too :)

  2. I'm actually planning out my meals for the next five days right now and your list is putting mine to absolute shame. On my list for this week: german pancakes, chinese chicken salad, leftover chinese chicken salad, BLTs, and pizza.
I agree with the previous comment. I want to eat at your house. Yum.

  3. I just read your weekly menu to Brad. He seemed very interested in all of those dishes. Do you think you could email me your recipes?

  5. Thanks guys! The trick is to make things that have impressive sounding names, but are easy:) The things I make usually take 30 minutes or less. I'm all about taking shortcuts. I'll post some of the shortcuts and recipes. Scott likes to make more complicated things than I do.
